Are pumpkin leaves edible? Yes and they are quite tasty. A bit like spinach. The flowers were even tastier. However both flowers and leaves seem to irritate the throat slightly as they are a little bit hairy. But perhaps cooking the leaves for longer and in water would help soften the bristles? I just zapped these leaves on HI in the microwave for a few minutes--which may have actually toughened them up even more. I know overcooking peas in the microwave can turn them into bullets!
